Delicacies of Bicol Cuisine

 Pansit bato

Pansit bato, also known as “Pansit guisado."  Just like the other places here in the Philippines, we have our own pansit dish that makes it unique in Bicol. Pansit bato is different because its noodles are ticker and have a little firmer bite. It’s cooked like most pansit dishes, with vegetables like cabbage, beans, carrots, pork, liver, and sayote. It can also be eaten in different styles with a pair of dinuguan for extra flavor and uniqueness. We sell this pansit bato here in Batangas, and this is the most popular order.

This kind of cuisine is instantly recognizable from the word "Bicol.” It is a popular Filipino dish, known originally in Bicol as Sinilihan, a famous spicy pork creamy stew made with gata (coconut milk), pork, bagoong alamang, ginger, garlic, onion, and mostly chilis or siling haba. This marks Bicol's trademark and uniqueness.

Chili ice cream or Sili ice cream

A list of Bicol delicacies would be incomplete without sili ice cream, a sweet and spicy dessert. This type of dessert is very different, which makes Bicolanos unique. It is made with heavy cream, coconut milk, sugar, and especially siling labuyo. When it comes to spiciness, it has different levels that fit the level that ranges from level 1, 2, 3, and volcano level.
